You can get rid of pudding pre-mixes, because this is super simple.

Ingredients:
500ml almond milk (or any milk of your choice)
2 egg yolk
50g sugar
30g corn starch
Shot of vanilla extract
Pinch of salt
Instructions:
Mix all the ingredients in a pot and heat up carefully. Cooking for about 7min stirring regularly.
Option:
If you prefer chocolate pudding, you can add chocolate of your choice and melt it into the mix. I tend to use a dark chocolate (70-80% cocoa). Just crush it into the pieces and then under constant stirring add it to the mix. Using a wooden spatula allows you to scrape the bottom of the pot to ensure no chocolate get's burned in the process.
Once cooked fill the mix into the bowls and garnish as you like. My favorite is fresh berries, but whipped cream and sprinkles sounds fun. 😀
